BBQ Bacon-Wrapped Jalapeño Poppers

Ingredients:

12 large jalapeño peppers

120 g cream cheese, softened

120 g grated cheddar cheese

1 teaspoon garlic powder

1 teaspoon smoked paprika

12 rashers of streaky bacon

2 tablespoons BBQ sauce

Instructions:


Preparing the Jalapeño Poppers:

  1. Preheat the Grill: Preheat your grill to medium-high heat (about 200-220°C).

  2. Prepare the Jalapeños: Cut each jalapeño in half lengthwise and remove the seeds and membranes using a spoon, being careful not to touch your face and wash your hands thoroughly after handling.


Making the Filling:

  1. Mix the Filling: In a medium bowl, combine the softened cream cheese, grated cheddar cheese, garlic powder, and smoked paprika. Mix until well blended.

  2. Fill the Jalapeños: Spoon the cheese mixture into each jalapeño half, filling them generously.


Wrapping and Grilling:

  1. Wrap with Bacon: Wrap each stuffed jalapeño half with a rasher of streaky bacon, securing it with a toothpick.

  2. Brush with BBQ Sauce: Lightly brush the bacon-wrapped jalapeños with BBQ sauce to add extra flavour and help with caramelisation.


Grilling the Jalapeño Poppers:

  1. Grill the Poppers: Place the bacon-wrapped jalapeño poppers on the grill. Cook for about 15-20 minutes, turning occasionally, until the bacon is crispy and the jalapeños are tender.

  2. Brush with More BBQ Sauce: In the last few minutes of grilling, brush the poppers with additional BBQ sauce for a sticky, caramelised finish.


Serving:

  1. Serve: Remove the poppers from the grill and let them cool for a few minutes. Serve hot as an appetiser or snack.


Chef’s Top Tip:

For milder poppers, soak the jalapeño halves in cold water for about 30 minutes before stuffing them. This helps reduce their spiciness, making them more palatable for those who prefer a less fiery taste.
