Ingredients:


For the Chicken Wings:

1.5 kg chicken wings

2 tablespoons vegetable oil

1 teaspoon sea salt

1 teaspoon ground black pepper

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder


For the BBQ Sauce:

240 ml tomato ketchup

60 ml apple cider vinegar

60 g brown sugar

2 tablespoons Worcestershire sauce

1 tablespoon Dijon mustard

1 tablespoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon chilli powder

Salt and pepper to taste


Instructions:


Preparing the Chicken Wings:

  1. Preheat the Grill: Preheat your grill to medium-high heat (about 200-220°C).

  2. Season the Wings: In a large bowl, toss the chicken wings with vegetable oil, sea salt, black pepper, smoked paprika, garlic powder, and onion powder until evenly coated.


Making the BBQ Sauce:

  1. Combine Ingredients: In a saucepan, combine the tomato ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, Dijon mustard, smoked paprika, garlic powder, onion powder, and chilli powder.

  2. Simmer: Bring the mixture to a simmer over medium heat, stirring occasionally. Let it cook for about 15 minutes, or until the sauce thickens. Season with salt and pepper to taste. Remove from heat and set aside.


Grilling the Chicken Wings:

  1. Grill the Wings: Place the seasoned chicken wings on the grill. Grill for about 10-12 minutes per side, turning occasionally, until they are golden brown and crispy, and the internal temperature reaches 75°C (165°F).

  2. Baste with BBQ Sauce: In the last 5 minutes of grilling, brush the chicken wings generously with the homemade BBQ sauce. Turn and baste them a few times to ensure they are well coated and caramelised.


Serving:

  1. Serve: Transfer the BBQ chicken wings to a serving platter and brush with any remaining BBQ sauce. Serve hot with extra BBQ sauce on the side for dipping.


Chef’s Top Tip:

For extra crispy wings, pat the chicken wings dry with paper towels before seasoning. Removing excess moisture helps achieve a better texture on the grill.
