Grilled BBQ Chicken Recipe for a British BBQ

Grilled BBQ chicken is a classic favourite that is sure to be a hit at your next British BBQ. Here’s my recipe for perfectly grilled, juicy, and flavourful BBQ chicken, including a delicious marinade and BBQ sauce.

Ingredients:


For the Chicken:

1.5 kg chicken pieces (thighs, drumsticks, and breasts, bone-in, skin-on)

2 tablespoons vegetable oil


For the Marinade:

60 ml olive oil

60 ml apple cider vinegar

60 ml lemon juice

60 ml Worcestershire sauce

60 ml soy sauce

2 tablespoons honey

3 cloves garlic, minced

1 tablespoon smoked paprika

1 teaspoon dried thyme

1 teaspoon ground black pepper

1 teaspoon sea salt


For the BBQ Sauce:

240 ml tomato ketchup

60 ml apple cider vinegar

60 g brown sugar

2 tablespoons Worcestershire sauce

1 tablespoon Dijon mustard

1 tablespoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon chilli powder

Salt and pepper to taste


Instructions:


Preparing the Chicken:

1. Marinate the Chicken: In a large bowl, whisk together the olive oil, apple cider vinegar, lemon juice, Worcestershire sauce, soy sauce, honey, minced garlic, smoked paprika, thyme, black pepper, and sea salt. Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.


Making the BBQ Sauce:

2. Combine Ingredients: In a saucepan, combine the tomato ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, Dijon mustard, smoked paprika, garlic powder, onion powder, and chilli powder.

3. Simmer: Bring the mixture to a simmer over medium heat, stirring occasionally. Let it cook for about 15 minutes, or until the sauce thickens. Season with salt and pepper to taste. Remove from heat and set aside.


Grilling the Chicken:

4. Prepare the Grill: Preheat your grill to medium heat (about 175-200°C). Oil the grill grates to prevent sticking.

5. Grill the Chicken: Remove the chicken from the marinade and pat dry with paper towels. Brush lightly with vegetable oil. Place the chicken pieces on the grill, skin side down. Grill for about 5-7 minutes per side, or until the skin is crispy and has nice grill marks.

6. Cook Indirectly: Move the chicken to a cooler part of the grill or reduce the heat to medium-low. Continue to cook, turning occasionally, until the internal temperature reaches 75°C for breasts and 80°C for thighs and drumsticks.


Finishing the Chicken:

7. Sauce the Chicken: In the last 10-15 minutes of grilling, brush a generous amount of BBQ sauce on the chicken pieces. Continue to cook, turning and basting with more sauce, until the chicken is glazed and caramelised.


Serving:

Serve the grilled BBQ chicken with extra BBQ sauce on the side and your favourite BBQ sides such as coleslaw, potato salad, and grilled vegetables.
